This Is the Best Potato Salad I’ve Ever Had!

Ingredients

  • 4 large potatoes, peeled and diced
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons chopped red onion (optional)

Instructions

  1. Boil the Potatoes: Place the diced potatoes in a large pot and add enough cold water to cover them. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 10-12 minutes, or until the potatoes are tender when pierced with a fork.
  2. Cool the Potatoes: Drain the potatoes and let them cool to room temperature.
