Ingredients
- 4 large potatoes, peeled and diced
- 1/2 cup mayonnaise
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh chives
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons chopped red onion (optional)
Instructions
- Boil the Potatoes: Place the diced potatoes in a large pot and add enough cold water to cover them. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 10-12 minutes, or until the potatoes are tender when pierced with a fork.
- Cool the Potatoes: Drain the potatoes and let them cool to room temperature.
- Mix the Dressing: In a large bowl, whisk together the mayonnaise, Dijon mustard, salt, and pepper.
- Combine the Potatoes and Dressing: Add the cooled potatoes to the bowl with the dressing and toss to coat.
- Add the Herbs and Onion: Stir in the chopped dill, chives, parsley, and red onion (if using).
- Chill and Serve: Cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve chilled.
Tips and Variations
- Use high-quality mayonnaise: A good mayonnaise can make a big difference in the flavor and texture of the salad.
- Add some acidity: A squeeze of fresh lemon juice or a splash of vinegar can help balance the richness of the mayonnaise.
- Experiment with different herbs: Try using different herbs like basil, tarragon, or cilantro to give the salad a unique flavor.
