Ingredients
- 8 cups all-purpose flour
 - 10 teaspoons baking powder
 - 1 cup granulated sugar
 - 500g baking margarine
 - Orange zest (to taste)
 - 1 1/2 cups raisins
 - 2 cups Amasi (or buttermilk)
 - 1/2 cup freshly squeezed orange juice
 - 2 teaspoons vanilla essence (optional)
 - 3 eggs (2 for the mixture, 1 for egg wash)
 
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
 - In a large bowl, mix flour, baking powder, and sugar.
 - Add baking margarine and mix until crumbly.
 - Stir in orange zest, raisins, Amasi, orange juice, and vanilla essence (if using).
 - Beat in 2 eggs.
 - Turn dough onto a floured surface and gently knead.
 - Pat into a circle and cut into wedges or use a scone cutter.
 - Brush tops with egg wash.
 - Bake for 15-20 minutes or until golden brown.
