Cheesy Chicken Fritters Recipe
Ingredients
- 1 lb (450g) chicken breast or thighs, finely chopped or ground
 - 1 cup shredded mozzarella cheese (or cheddar)
 - 2 large eggs
 - 3 tbsp mayonnaise
 - 3 tbsp all-purpose flour (or almond flour for a low-carb option)
 - 2 tbsp fresh parsley, finely chopped (or 1 tsp dried parsley)
 - 1/2 tsp garlic powder
 
1/2 tsp paprika (optional, for a smoky flavor)
- Salt and black pepper to taste
 - 2–3 tbsp olive oil or vegetable oil (for frying)
 
Instructions
1. Prepare the Chicken Mixture:
- In a large bowl, combine the finely chopped chicken, shredded cheese, eggs, mayonnaise, and parsley.
 - Add the flour, garlic powder, paprika, salt, and black pepper. Mix until well combined. The mixture should hold together but still be slightly sticky.
 
2. Shape the Fritters:
- Use a spoon or your hands to scoop out portions of the mixture. Shape them into small patties or fritters (about 2–3 inches wide).
 
3. Cook the Fritters:
- Heat the oil in a large skillet over medium heat.
 - Place the fritters in the skillet, leaving space between them. Cook for 3–4 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
 
4. Drain and Serve:
- Remove the fritters from the skillet and place them on a plate lined with paper towels to remove excess oil.
 - Serve warm with your favorite dipping sauce (like ranch, garlic aioli, or sour cream).
 
Tips:
- For extra flavor, add chopped green onions or grated Parmesan cheese to the mixture.
 - If you prefer baking, place the fritters on a parchment-lined baking sheet and bake at 375°F (190°C) for 20–25 minutes, flipping halfway through.
