Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup finely grated carrots
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 cup cream cheese, softened
- 2 tablespoons powdered sugar
- 1/4 cup chopped walnuts (optional)
Directions:
- In a large bowl, whisk together the heavy cream, whole milk, granulated sugar, and vanilla extract. Then, fold in those finely grated carrots along with the cinnamon, nutmeg, and ginger. Make sure everything is well combined and creamy!
- Pour this fantastic mixture into your ice cream maker and churn it for about 25 minutes until it reaches a soft-serve consistency.
- While the ice cream is working its magic, let’s prepare that tempting cream cheese swirl! In a separate bowl, beat the softened cream cheese and powdered sugar until it’s nice and smooth.
- Once your ice cream is ready, scoop half of it into a freezer-safe container. Pour half of the cream cheese mixture on top and sprinkle with half of the chopped walnuts, if you’re using them. Repeat the layering with the remaining ice cream and the rest of the cream cheese mixture and walnuts.
- Cover your container and freeze it for at least 4 hours until it’s firm. When you’re ready to enjoy, allow the ice cream to soften a bit for easier scooping.
