Ingredients:
- 4 chicken breasts
- 4 tbsp honey
- 3 tbsp Dijon mustard
- 2 garlic cloves, minced
- 500g asparagus
- 4 medium potatoes
- 1 cup shredded cheese (such as cheddar or mozzarella)
- Salt and pepper, to taste
Instructions:
- Preheat Oven: Preheat oven to 400°F (200°C).
- Prepare Chicken: In a small bowl, whisk together honey, Dijon mustard, and garlic.
- Marinate Chicken: Brush the honey mustard mixture onto both sides of the chicken breasts.
- Roast Asparagus: Toss asparagus with olive oil, salt, and pepper on a baking sheet. Roast in the oven for 12-15 minutes, or until tender.
- Roast Potatoes: Toss diced potatoes with olive oil, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes, or until tender.
- Bake Chicken: Place the chicken breasts on a baking sheet lined with parchment paper. Bake in the oven for 20-25 minutes, or until cooked through.
- Top with Cheese: Sprinkle shredded cheese over the top of the chicken breasts during the last 5 minutes of baking.
