Orange Raisin Scones Recipe With Amasi And Orange Juice


Ingredients

  1. 8 cups all-purpose flour
  2. 10 teaspoons baking powder
  3. 1 cup granulated sugar
  4. 500g baking margarine
  5. Orange zest (to taste)
  6. 1 1/2 cups raisins
  7. 2 cups Amasi (or buttermilk)
  8. 1/2 cup freshly squeezed orange juice
  9. 2 teaspoons vanilla essence (optional)
  10. 3 eggs (2 for the mixture, 1 for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, baking powder, and sugar.
  3. Add baking margarine and mix until crumbly.
  4. Stir in orange zest, raisins, Amasi, orange juice, and vanilla essence (if using).
  5. Beat in 2 eggs.
  6. Turn dough onto a floured surface and gently knead.
  7. Pat into a circle and cut into wedges or use a scone cutter.
  8. Brush tops with egg wash.
  9. Bake for 15-20 minutes or until golden brown.
