Philly Cheesesteak Meatloaf

Ingredients:

For the Meatloaf:

1 ½ lbs ground beef (or a mix of beef and pork)
1 green bell pepper (finely chopped)
1 small onion (finely chopped)
1 cup shredded provolone cheese (or mozzarella)
½ cup breadcrumbs
2 large eggs
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
½ tsp black pepper
For the Topping:

1 cup shredded provolone cheese (or your choice of cheese)
1 small onion (sliced)
1 green bell pepper (sliced)
1 tbsp olive oil
Instructions:

Preheat the Oven:

Preheat your oven to 375°F (190°C).
Lightly grease a loaf pan or baking dish.
Prepare the Meatloaf Mixture:

In a large bowl, combine ground beef, chopped bell pepper, chopped onion, shredded cheese, breadcrumbs, eggs, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form the Meatloaf:

Shape the mixture into a loaf and place it in the prepared loaf pan or on a lined baking sheet.
Bake the Meatloaf:

Bake for 40-45 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
Prepare the Topping:

While the meatloaf bakes, heat olive oil in a skillet over medium heat.
Sauté sliced onion and bell pepper until softened and slightly caramelized.
Add the Topping:

Remove the meatloaf from the oven and sprinkle the top with shredded provolone cheese.
Add the sautéed onions and peppers on top of the cheese.
Melt the Cheese:

Return the meatloaf to the oven for 5 minutes, or until the cheese is melted and bubbly.
Serve:

Let the meatloaf rest for 5-10 minutes before slicing.
Serve with mashed potatoes, roasted vegetables, or your favorite side dish.
