Ingredients
- 1 lb cooked shrimp, peeled and chopped
- 1/4 cup chopped red onion
- 1 diced tomato
- 1 diced avocado
- 1 tsp olive oil
- Juice of 1 lime
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tbsp chopped cilantro
- 1 finely diced, de-seeded jalapeño Instructions
In a bowl, mix red onion, lime juice, olive oil, salt, and black pepper. Let sit for 5 minutes to soften the onion.
In another bowl, toss the shrimp, avocado, jalapeño, and tomato.
Add the shrimp mixture to the lime dressing and gently toss to combine.
Taste and adjust seasoning if needed.
Serve fresh and enjoy.
